Light Pizza Soup

Total Time: 20 hrs 5 mins Preparation Time: 5 mins Cook Time: 20 hrs

Ingredients

  • Servings: 4
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon olive oil
  • 1 zucchini, chopped (optional)
  • 1 (14 1/2 ounce) can low sodium beef broth
  • 1 (14 1/2 ounce) can diced italian tomatoes
  • 3 ounces turkey pepperoni, chopped
  • 1 teaspoon pizza seasoning
  • 1/2 cup low fat part-skim mozzarella cheese
  • 1 (14 1/2 ounce) jar pizza sauce
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • salt and pepper

Recipe

  • 1 saute onions and peppers in olive oil over medium heat until they just begin to soften. add garlic and seasoning and saute for 1-2 minutes more.
  • 2 add the peppers and onions to the pot along with the zucchini, broth, tomatoes, pizza sauce, red pepper (if desired) and pepperoni.
  • 3 if cooking on the stovetop, cook on medium/low for at least 20 minutes. if using the crock pot cook on low for 3-4 hours.
  • 4 season with salt and pepper. serve topped with 2 tbs mozzarella.
