Mild Italian Sausage, Tomato & Zucchini Stew

Total Time: 1 hr Cook Time: 1 hr

Ingredients

  • 1 1/4 lbs mild italian sausage, casings removed
  • 1 1/2 cups celery, sliced
  • 4 cups fresh tomatoes, peeled, cut in wedges (save juice) or 2 (28 ounce) cans tomatoes
  • 1 1/2 cups tomato juice
  • 1 1/2 lbs zucchini, cut into 1/4 inch slices
  • 2 teaspoons salt
  • 1 1/2 teaspoons italian seasoning
  • 1 teaspoon sugar
  • 1/4 teaspoon garlic salt
  • 2 green peppers, cut into 1 inch pieces
  • mozzarella cheese, shredded (for garnish) or parmesan cheese, grated (for garnish) or romano cheese (for garnish)

Recipe

  • 1 brown sausage in large, deep saucepan.
  • 2 add sliced celery and cook for 15 minute.
  • 3 drain off fat. add tomatoes, tomato juice, zucchini and seasonings.
  • 4 simmer, covered for 20 minute.
  • 5 add green peppers, summer an additional 15 minute.
  • 6 garnish with cheese. serve with french bread.
  • 7 note: for more liquid, add tomato juice (and i would use garlic cloves instead of garlic salt, if you like garlic).
