My Big Fat Greek Pasta Salad

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 lb bow tie pasta
  • 1 cup frozen peas, thawed
  • 1 cup baby spinach
  • 1 cup shredded carrot
  • 1 cup diced zucchini
  • 1 cup extra virgin olive oil
  • 1/2 cup wine vinegar
  • 1 lemon
  • 3 sprigs fresh mint
  • 2 tablespoons all purpose greek seasoning
  • 2 tablespoons sugar
  • 2 garlic cloves, minced
  • 2 green onions, diced
  • 1/2 lb crumbled feta cheese

Recipe

  • 1 cook pasta til al dente. drain.
  • 2 add veggies to pasta.
  • 3 for dressing assoil, vinegar, lemon juice, seasoning, sugar and garlic.
  • 4 toss in pasta.
  • 5 top with lemon zest,chopped mint and cheese.
  • 6 chill.
