My Big Fat Greek Pasta Salad

Ingredients
- 1 lb bow tie pasta
- 1 cup frozen peas, thawed
- 1 cup baby spinach
- 1 cup shredded carrot
- 1 cup diced zucchini
- 1 cup extra virgin olive oil
- 1/2 cup wine vinegar
- 1 lemon
- 3 sprigs fresh mint
- 2 tablespoons all purpose greek seasoning
- 2 tablespoons sugar
- 2 garlic cloves, minced
- 2 green onions, diced
- 1/2 lb crumbled feta cheese
Recipe
- 1 cook pasta til al dente. drain.
- 2 add veggies to pasta.
- 3 for dressing assoil, vinegar, lemon juice, seasoning, sugar and garlic.
- 4 toss in pasta.
- 5 top with lemon zest,chopped mint and cheese.
- 6 chill.
