Kolokithakia Me Feta (zucchini With Feta)

Ingredients

- 4 large zucchini
- 2 tablespoons salt
- 1/2 cup flour
- 1/2 cup grated parmesan cheese
- 2 tablespoons fresh mint, finely chopped or
- 1 teaspoon dried mint
- 1 cup crumbled feta cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup olive oil or 1/2 cup vegetable oil
Recipe
- 1 heat oven to 400 degrees.
- 2 slice zucchini lengthwise into 1/2" thick slices. sprinkle with salt, place in a colander and let stand until water drains, approximately 2 hours.
- 3 rinse zucchini and squeeze dry with paper towels.
- 4 coat each zucchini slice with flour.
- 5 place a layer of zucchini in a 9" square greased baking pan.
- 6 sprinkle with 1/3 of the parmesan, mint and feta.
- 7 repeat layers of zucchini, cheeses and mint but save enough zucchini for a top layer.
- 8 sprinkle mozzarella over all.
- 9 top with a layer of zucchini.
- 10 pour oil over all.
- 11 bake for 45 minutes or until the zucchini is tender.
- 12 cool for 25-30 minutes. cut into squares.
- 13 serve hot or at room temperature.
