Kolokithakia Me Feta (zucchini With Feta)

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 4 large zucchini
  • 2 tablespoons salt
  • 1/2 cup flour
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh mint, finely chopped or
  • 1 teaspoon dried mint
  • 1 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup olive oil or 1/2 cup vegetable oil

Recipe

  • 1 heat oven to 400 degrees.
  • 2 slice zucchini lengthwise into 1/2" thick slices. sprinkle with salt, place in a colander and let stand until water drains, approximately 2 hours.
  • 3 rinse zucchini and squeeze dry with paper towels.
  • 4 coat each zucchini slice with flour.
  • 5 place a layer of zucchini in a 9" square greased baking pan.
  • 6 sprinkle with 1/3 of the parmesan, mint and feta.
  • 7 repeat layers of zucchini, cheeses and mint but save enough zucchini for a top layer.
  • 8 sprinkle mozzarella over all.
  • 9 top with a layer of zucchini.
  • 10 pour oil over all.
  • 11 bake for 45 minutes or until the zucchini is tender.
  • 12 cool for 25-30 minutes. cut into squares.
  • 13 serve hot or at room temperature.
