Lemon Chicken, Chinese Style

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs chicken breasts, sliced thinly (or use chicken breast filets)
  • 2 beaten eggs
  • cornstarch
  • salt, pepper
  • 1/2 lemon, thinly sliced
  • 1 medium onion, chopped
  • 1 tablespoon oil
  • 1/2 cup sugar
  • 1/2 cup pineapple juice
  • 1/4 cup vinegar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 tablespoon soy sauce

Recipe

  • 1 dip chicken pieces into 2 beaten eggs.
  • 2 mix cornstarch, salt and pepper and dip the chicken in the cornstarch mixture.
  • 3 fry in small amount of oil in frying pan.
  • 4 put into a casserole dish.
  • 5 make sauce: saute the lemon and onion in the oil until onion is soft.
  • 6 add the sugar, vinegar, and pineapple juice.
  • 7 in a separate bowl, mix the corn starch, water, and soy sauce, then add to the sauce.
  • 8 cook until clear and thick.
  • 9 pour on chicken in the casserole dish.
  • 10 cover and cook at 300 for 30 minutes or until done.
