Lamb With Pasta (ww)

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups whole wheat penne (or your favorite pasta)
  • 6 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin, ground
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 lb lamb tenderloin, sliced
  • 1 yellow bell pepper, sliced
  • 2 red bell peppers, sliced
  • 1 onion, cut into wedges
  • 1 carrot, cut into julienne strips
  • 1 (4 ounce) can green chilies, drained and chopped
  • 1 zucchini, cut in half lengthwise and sliced

Recipe

  • 1 cook pasta according to package directions, drain and cover to keep warm.
  • 2 while pasta is cooking in a bowl combine 1 tablespoon of the oil, 2 tablespoons of the lime juice and the spices (cumin - garlic powder). add lamb and toss to coat.
  • 3 heat the remaining oil in a skillet over medium high heat. add lamb mixture and cook about 5-10 minutes or until lamb is browned.
  • 4 add next 5 ingredients (peppers - chilies), cook, stirring for 3-5 minutes or until vegetables are tender.
  • 5 stir in zucchini and the rest of the lime juice (4 t), cover and cook for 2-5 minutes longer.
  • 6 stir in pasta and stir to combine.
