Grilled Vegetable Salad

Ingredients
- Servings: 4
- 1 red pepper, cut into large pieces
- 1 yellow pepper, cut into large pieces
- 1 zucchini, cut into 1/4 inch think slices
- 1 eggplant, cut into 1/4 inch think slices
- 1 medium red onion, cut into 1 inch thick chunks
- 1/3 cup balsamic vinaigrette
Recipe
- 1 place vegetables in large bowl.
- 2 add dressing; toss to coat.
- 3 let stand 20 minutes to marinate, stirring occasionally.
- 4 remove vegetable mixture from marinade. reserve marinade for later use.
- 5 preheat barbecue to medium heat. place vegetable on grate of barbecue.
- 6 grill 8 min or until vegetables are crisp tender, turning occasionally.
- 7 place vegetable mixture in large bowl. add reserved marinade, toss lightly.
