Grilled Vegetable Salad

Total Time: 58 mins Preparation Time: 30 mins Cook Time: 28 mins

Ingredients

  • Servings: 4
  • 1 red pepper, cut into large pieces
  • 1 yellow pepper, cut into large pieces
  • 1 zucchini, cut into 1/4 inch think slices
  • 1 eggplant, cut into 1/4 inch think slices
  • 1 medium red onion, cut into 1 inch thick chunks
  • 1/3 cup balsamic vinaigrette

Recipe

  • 1 place vegetables in large bowl.
  • 2 add dressing; toss to coat.
  • 3 let stand 20 minutes to marinate, stirring occasionally.
  • 4 remove vegetable mixture from marinade. reserve marinade for later use.
