Ingredients

- 2 teaspoons vegetable oil
- 1 cup sliced onion, separated into rings
- 1 cup red bell pepper, cut into strips
- 2 cloves garlic, minced
- 1 3/4 cups sliced yellow squash
- 1 3/4 cups sliced zucchini
- 1 cup chopped unpeeled plum tomato
- 1 tablespoon julienne-cut fresh basil
- 1/2 teaspoon lemon pepper
- 1/4 teaspoon salt
- 2 tablespoons grated parmesan cheese
Recipe
- 1 heat oil in a large nonstick skillet over medium-high heat.
- 2 add onion, bell pepper, and garlic, stir-fry 2 minutes.
- 3 add squash and zucchini, stir-fry 3 minutes or until vegetables are crisp-tender.
- 4 add tomato and next 3 ingredients; cook 1 minute or until thoroughly heated.
- 5 remove from heat, sprinkle with cheese.
