Garden Vegetable Pie

Ingredients

- 2 cups zucchini, chopped
- 1 cup tomato, chopped
- 1/2 cup onion, chopped
- 1/3 cup parmesan cheese, grated
- 1 1/2 cups milk
- 3 large eggs
- 3/4 cup bisquick
- salt and pepper
Recipe
- 1 mix zucchini, tomato, onion and cheese in a 10" x 1 1/2" pie plate (or larger rectangular dish) beat remaining ingredients until smooth, about 1 minute.
- 2 pour into pie plate.
- 3 bake at 400 for about 35 minutes.
- 4 cool 5 minutes before serving.
