Ratatouille

Ingredients

  • Servings: 6
  • 3 tablespoons natural grapeseed oil
  • 2 bell peppers, diced
  • 1 yellow onion, diced
  • 28 ounces peeled plum tomatoes
  • 2 tablespoons mediterranean seasoning (wildtree mediterranean dry rub)
  • 2 tablespoons garlic, galore (wildtree)
  • 1 eggplant (cubed)
  • 2 zucchini (cubed)
  • 1 tablespoon hearty spaghetti blend seasoning (wildtree hearty spaghetti blend)

Recipe

  • 1 in large sauce pot heat 1 tb grapeseed oil, add bell pepper and onion, cook until tender.
  • 2 remove seeds from canned tomatoes, dice and add along with juice from can. season with the mediterranean rub and 1 tb of garlic galore. cook for 30 minutes.
  • 3 in a separate pan, heat the remaining grapeseed oil , add the eggplant, zucchini, remaining 1 tb garlic galore and hearty spaghetti blend. stir, sauté 10 minutes.
  • 4 add to first pot after the 30 minutes have passed. stir, cover and cook until eggplant is tender.
