Garden Fresh Fettuccine

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 (16 ounce) package fettuccine
  • 1 large zucchini, julienned
  • 2 medium red peppers, cut into strips
  • 2 medium onions, chopped fine
  • 5 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 4 medium tomatoes, peeled, seeded, and chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/8 teaspoon crushed red pepper flakes
  • 1/3 cup parmesan cheese, shredded

Recipe

  • 1 cook fettuccine according to package directions.
  • 2 meanwhile, in a large skillet, saute the zucchini, peppers, onions and garlic until tender.
  • 3 add the tomatoes, salt, pepper, and pepper flakes. saute 4-5 minutes longer.
  • 4 drain pasta and add to vegetable mixture.
  • 5 toss to coat and sprinkle with cheese.
  • 6 i liked putting a little sprinkle of fresh parsley over the top.
