Garden Fresh Fettuccine

Ingredients

- 1 (16 ounce) package fettuccine
- 1 large zucchini, julienned
- 2 medium red peppers, cut into strips
- 2 medium onions, chopped fine
- 5 garlic cloves, minced
- 2 tablespoons vegetable oil
- 4 medium tomatoes, peeled, seeded, and chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/8 teaspoon crushed red pepper flakes
- 1/3 cup parmesan cheese, shredded
Recipe
- 1 cook fettuccine according to package directions.
- 2 meanwhile, in a large skillet, saute the zucchini, peppers, onions and garlic until tender.
- 3 add the tomatoes, salt, pepper, and pepper flakes. saute 4-5 minutes longer.
- 4 drain pasta and add to vegetable mixture.
- 5 toss to coat and sprinkle with cheese.
- 6 i liked putting a little sprinkle of fresh parsley over the top.
