Green Sauce

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 tablespoon dijon mustard
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup packed fresh basil leaf
  • 1/4 cup packed dill sprigs
  • 1/4 cup packed parsley sprig
  • 4 ounces fresh spinach
  • 1/4 cup plain yogurt

Recipe

  • 1 in small bowl, blend oil, mustard, lemon juice, garlic, salt and pepper until well mixed.
  • 2 in food processor or blender, process basil, dill and parsley until minced. add spinach; process until pureed and smooth. add yogurt.
  • 3 with machine running, gradually add oil mixture; process until thick mayonnaise consistency.
  • 4 refrigerate.
  • 5 serve over grilled fish.
