Ingredients

- 2 tablespoons olive oil
- 1 tablespoon dijon mustard
- 2 tablespoons lemon juice
- 3 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup packed fresh basil leaf
- 1/4 cup packed dill sprigs
- 1/4 cup packed parsley sprig
- 4 ounces fresh spinach
- 1/4 cup plain yogurt
Recipe
- 1 in small bowl, blend oil, mustard, lemon juice, garlic, salt and pepper until well mixed.
- 2 in food processor or blender, process basil, dill and parsley until minced. add spinach; process until pureed and smooth. add yogurt.
- 3 with machine running, gradually add oil mixture; process until thick mayonnaise consistency.
- 4 refrigerate.
- 5 serve over grilled fish.
