Lemon Zucchini

Ingredients
- Servings: 4
- 4 -5 small zucchini, boiled and sliced
- 2 tablespoons chopped mild onions or 2 tablespoons chopped shallots
- 2 tablespoons butter
- 1/2 teaspoon grated lemon peel
- 2 tablespoons lemon juice
- 1/8 teaspoon herbes de provence (i use a bit more, probably more like 1/4 t)
Recipe
- 1 boil and slice zucchini. drain well.
- 2 cook shallots and butter on low heat.
- 3 when shallots are tender, add lemon peel and juice to pan. cook slowly for 2 minutes.
- 4 add zucchini to pan and mix well. cook until all is heated.
