Lemon Zucchini

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 -5 small zucchini, boiled and sliced
  • 2 tablespoons chopped mild onions or 2 tablespoons chopped shallots
  • 2 tablespoons butter
  • 1/2 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 1/8 teaspoon herbes de provence (i use a bit more, probably more like 1/4 t)

Recipe

  • 1 boil and slice zucchini. drain well.
  • 2 cook shallots and butter on low heat.
  • 3 when shallots are tender, add lemon peel and juice to pan. cook slowly for 2 minutes.
  • 4 add zucchini to pan and mix well. cook until all is heated.
