Penne With Tomatoes And Feta

Ingredients

  • Servings: 6
  • 1 (16 ounce) package penne pasta, uncooked
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 large zucchini, halved and sliced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (14 ounce) can diced tomatoes
  • 1/2 teaspoon red pepper flakes
  • 8 ounces crumbled feta cheese
  • 3/4 cup half-and-half

Recipe

  • 1 cook penne pasta until al dente; drain well and set aside.
  • 2 heat oil in a large skillet and add onion, cooking over medium-high heat until slightly softened, about 5 minutes.
  • 3 add zucchini, oregano, salt, and pepper; cook for 3-4 minutes, stirring occasionally.
  • 4 add tomatoes, red pepper, feta cheese, and half and half.
