Penne With Tomatoes And Feta

Ingredients

- 1 (16 ounce) package penne pasta, uncooked
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 large zucchini, halved and sliced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 (14 ounce) can diced tomatoes
- 1/2 teaspoon red pepper flakes
- 8 ounces crumbled feta cheese
- 3/4 cup half-and-half
Recipe
- 1 cook penne pasta until al dente; drain well and set aside.
- 2 heat oil in a large skillet and add onion, cooking over medium-high heat until slightly softened, about 5 minutes.
- 3 add zucchini, oregano, salt, and pepper; cook for 3-4 minutes, stirring occasionally.
- 4 add tomatoes, red pepper, feta cheese, and half and half.
