Ingredients
- 3 cups simply potatoes® shredded hash browns
- 3 cups favorite tomato sauce
- 6 eggs
- shredded pecorino romano cheese
- 1 medium sliced zucchini
Recipe
- 1 sauté the hash browns and zucchini together in a large sauté pan in a little water.
- 2 once they start to soften and brown sprinkle some cheese on top in the pan.
- 3 pour the sauce on top.
- 4 crack the eggs right into the sauce, try to scatter them.
- 5 then sprinkle with more cheese.
- 6 put a lid on top, simmer on low to medium for about 8 minutes.
- 7 scoop into bowl and enjoy!
