Pizza Protein Potatoes #5fix

Ingredients

  • 3 cups simply potatoes® shredded hash browns
  • 3 cups favorite tomato sauce
  • 6 eggs
  • shredded pecorino romano cheese
  • 1 medium sliced zucchini

Recipe

  • 1 sauté the hash browns and zucchini together in a large sauté pan in a little water.
  • 2 once they start to soften and brown sprinkle some cheese on top in the pan.
  • 3 pour the sauce on top.
  • 4 crack the eggs right into the sauce, try to scatter them.
  • 5 then sprinkle with more cheese.
  • 6 put a lid on top, simmer on low to medium for about 8 minutes.
  • 7 scoop into bowl and enjoy!
