Lemon Oven Fries

Ingredients

  • Servings: 4
  • 2 large baking potatoes, scrubbed
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice, divided
  • 1/2 teaspoon dried thyme
  • kosher salt
  • fresh ground black pepper

Recipe

  • 1 preheat oven to 475°f wrap a baking sheet with aluminum foil and spray with nonstick cooking spray.
  • 2 cut potatoes into wedges. combine potatoes with olive oil, 1 tbsp lemon juice, thyme, salt and pepper in a zip top bag. shake well, then empty onto baking sheet. spread potatoes out into one layer; keep them from touching as much as possible.
  • 3 bake in preheated oven 15-20 minutes. turn pieces over and bake an additional 10 minutes, until crisp and brown on both sides. sprinkle with remaining tbsp of lemon juice before serving.
