Pasta Salad For Tots

Ingredients
- 2 cups whole wheat pasta (shaped in wheels or another "fun" shape if possible)
- 1 cup chopped fresh broccoli
- 1/4 cup sliced black olives
- 1/2 cup baby carrots, julienne
- 1/2 cup zucchini, sliced thin
- 1/2 red onion, sliced very thin
- 2 tablespoons olive oil
- black pepper and lemon juice (or low-fat salad dressing)
Recipe
- 1 boil pasta al dente.
- 2 sauté broccoli, carrots, zucchini in olive oil until crisp yet tender.
- 3 drain & rinse pasta.
- 4 combine pasta and vegetables in large bowl and add parmesan cheese to lightly coat.
- 5 add black pepper and lemon juice if you wish.
- 6 serve warm or cold.
