Pasta Salad For Tots

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 2 cups whole wheat pasta (shaped in wheels or another "fun" shape if possible)
  • 1 cup chopped fresh broccoli
  • 1/4 cup sliced black olives
  • 1/2 cup baby carrots, julienne
  • 1/2 cup zucchini, sliced thin
  • 1/2 red onion, sliced very thin
  • 2 tablespoons olive oil
  • black pepper and lemon juice (or low-fat salad dressing)

Recipe

  • 1 boil pasta al dente.
  • 2 sauté broccoli, carrots, zucchini in olive oil until crisp yet tender.
  • 3 drain & rinse pasta.
  • 4 combine pasta and vegetables in large bowl and add parmesan cheese to lightly coat.
  • 5 add black pepper and lemon juice if you wish.
  • 6 serve warm or cold.
