Mild Vegetarian Chili

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 3 medium carrots, peeled and chopped
  • 2 medium tomatoes, chopped
  • 3/4 cup mushroom
  • 2 medium zucchini, chopped
  • 1 green bell pepper, chopped
  • 1 sweet red pepper, chopped
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 (15 ounce) can pinto beans
  • 1 (15 ounce) can black beans
  • 2 (750 ml) salsa (i use homemade)
  • 1 teaspoon cumin
  • 2 tablespoons dried oregano
  • 2 tablespoons dried parsley
  • 2 tablespoons chili powder
  • 1 tablespoon sugar
  • salt & pepper

Recipe

  • 1 in a large pot, saute all vegetables and garlic in the oil.
  • 2 drain and rinse the beans.
  • 3 add to pot along with remaining ingredients.
  • 4 bring to boil.
  • 5 once boiling, let simmer for 30 minutes.
