Pl's Vegetarian Salsa Stir-fry

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 tablespoon oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, crushed
  • 8 -10 portabella mushrooms, thinly sliced
  • 1 carrot, thinly sliced
  • 1 -2 zucchini, thinly sliced
  • 1 small green bell pepper, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 1 small orange bell pepper, thinly sliced
  • 1 (300 g) container salsa
  • rice, to serve

Recipe

  • 1 heat a skillet over medium-high heat and add the oil.
  • 2 add onion and garlic, and cook, stirring, until tender.
  • 3 add the mushrooms and stir for 3-5 minutes.
  • 4 add the carrot, zucchini and bell peppers, and stir until tender, and carrot isn't 'hard'.
  • 5 remove from heat and add the salsa, stirring to mix it inches.
  • 6 replace on heat and simmer for 5-10 minutes.
  • 7 remove from heat and serve with rice.
