Raw Creamy Sun-dried Tomato Pasta

Ingredients

  • Servings: 3
  • 1 cup pine nuts, unsoaked
  • 1/4 cup olive oil
  • 1 garlic clove, peeled
  • 1/2 lime, juice of
  • 1 teaspoon sea salt
  • 1 small tomato, seeded
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon nutritional yeast
  • 6 sun-dried tomatoes, unsoaked
  • water
  • 2 small zucchini, peeled
  • 1 small sweet potato, peeled

Recipe

  • 1 in a food processor, combine pine nuts, olive oil, garlic, lime juice, sea salt, tomato, balsamic vinegar and nutritional yeast. blend until creamy.
  • 2 add sun dried tomatoes and blend but leaving some tomato chunks.
  • 3 add water until sauce is at desired consistency. sauce should be decently thick.
  • 4 using spirilizer, made noodles out of the zucchini and sweet potato.
