Kelly's Chocolate Chip And Pecan Zucchini Bread

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 1 cup sugar
  • 1 cup dark brown sugar
  • 2 teaspoons vanilla
  • 2 cups zucchini, peeled, grated
  • 3 cups flour
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 cup chopped pecans
  • 2 cups chocolate chips or 2 cups semi-sweet chocolate chips or 2 cups milk chocolate chips

Recipe

  • 1 in large bowl, beat eggs til foamy.
  • 2 beat in next 4 ingredients.
  • 3 beat in zucchini.
  • 4 in another bowl, combine dry ingredients, add to wet mixture.
  • 5 mix well.(*except nuts and chips.)
  • 6 then stir in nuts and chips.
  • 7 bake in 325º oven for 60-75 minutes in 2 greased and floured bread loaf pans.
  • 8 let cool 5 minutes, loosen sides with knife, turn out onto wire rack to cool. wrap tightly, store in fridge.
