Rita's Polenta Lasagna

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 16 ounces prepared polenta
  • 1 medium zucchini
  • 12 ounces cooked ground italian sausage (chicken or turkey is great)
  • 1/2 cup fresh basil leaf, thinly sliced
  • 1 (32 ounce) jar marinara sauce
  • 5 -6 slices provolone cheese
  • 2 cups mozzarella cheese, grated
  • 2 ounces parmesan cheese, grated

Recipe

  • 1 slice the polenta and zucchini into 1/4" slices; set aside.
  • 2 in seperate bowl, add cooked sausauge, add basil, and marinara sauce, mixing well.
  • 3 arrange half of the polenta over the bottom of large skillet; top with half of the sausage mixture.
  • 4 layer provolone, zucchini, and mozzarella over sausage mixture.
  • 5 top with remaining polenta and sausage mixture.
  • 6 cover and cook over medium high heat approx 8 - 10 minutes or until sauce is bubbly and cheeses are melted.
  • 7 remove skillet from heat.
  • 8 sprinkle grated parmesan cheese over lasagna and let stand, uncovered, approx 2 - 3 minutes.
  • 9 garnish with remaining basil.
