Lemon Orzo Salad With Zucchini And Fresh Herbs

Ingredients

  • Servings: 4
  • 1 cup orzo pasta (rice-shaped pasta)
  • 2 small zucchini, diced (about 3/4 pound)
  • 1 cup finely chopped fresh parsley
  • 1/4 cup finely chopped fresh mint
  • 1 grated lemon, rind of
  • 3 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • salt and pepper

Recipe

  • 1 cook the orzo until tender but firm.
  • 2 drain in a colander; rinse under cold water to cool, and drain well.
  • 3 mix the orzo, zucchini, parsley, and mint in a large bowl with a large spoon.
  • 4 whisk the remaining ingredients in a small bowl.
  • 5 pour over the salad and mix with a large spoon.
