Lower-fat Zucchini Stuffing Casserole

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 10
  • 4 small zucchini, sliced
  • 1 small onion, chopped
  • 1 cup low-fat sour cream
  • 10 1/2 ounces healthy request cream of chicken soup
  • 1 1/2 cups stuffing cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Recipe

  • 1 saute zucchini and onion in olive oil until soft.
  • 2 add salt, pepper, and garlic powder.
  • 3 in a casserole dish, combine soup, sour cream, and 1 c of stuffing mix.
  • 4 when zucchini and onion are soft, but not mushy, fold into casserole.
  • 5 top with 1/2 c of stuffing mix.
  • 6 bake at 350 for 20-30 minutes.
