Lower-fat Zucchini Stuffing Casserole

Ingredients

- 4 small zucchini, sliced
- 1 small onion, chopped
- 1 cup low-fat sour cream
- 10 1/2 ounces healthy request cream of chicken soup
- 1 1/2 cups stuffing cubes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
Recipe
- 1 saute zucchini and onion in olive oil until soft.
- 2 add salt, pepper, and garlic powder.
- 3 in a casserole dish, combine soup, sour cream, and 1 c of stuffing mix.
- 4 when zucchini and onion are soft, but not mushy, fold into casserole.
- 5 top with 1/2 c of stuffing mix.
- 6 bake at 350 for 20-30 minutes.
