- 1 lb zucchini, thinly sliced
- 1/4 cup golden raisin
- 2 tablespoons chopped fresh mint
- 1/4 teaspoon salt

- 1 in a large nonstick skillet heat oil to medium high. add zucchini and cook, stirring often, until crisp-tender, about 5 minutes.
