Minted Zucchini And Carrots

Total Time: 13 mins Preparation Time: 5 mins Cook Time: 8 mins

Ingredients

  • Servings: 4
  • 2 large carrots
  • 1/2 cup chicken broth
  • 2 small zucchini
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon chopped fresh mint

Recipe

  • 1 peel carrots and cut into thin strips about 2 inches long.
  • 2 in a small saucepan, heat chicken broth to boiling over medium heat. add carrot sticks, cover and cook 4 minutes.
  • 3 add zucchini and cook until both vegetables are just tender, about 4 minutes longer.
  • 4 season with salt and pepper. toss with mint.
