Skillet Chicken Mozzarella

Ingredients

- 4 boneless chicken breasts
- 2 tablespoons flour
- 1/8 teaspoon pepper
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1 green pepper, cut into 1/2-inch pieces
- 1 medium onion, sliced
- 28 ounces diced tomatoes
- 1 teaspoon dried basil
- 2 medium zucchini, chopped
- 1/2 cup mozzarella cheese, shredded
- 2 tablespoons parmesan cheese
Recipe
- 1 pound each chicken breast to 1/4-inch thickness.
- 2 combine flour and pepper and dip chicken into mixture, coating evenly.
- 3 in a large skillet over medium heat, saute chicken in oil until browned. transfer chicken to a plate.
- 4 add garlic, peppers and onions to skillet and saute until crisp-tender.
- 5 return chicken to the skillet.
- 6 add tomatoes, basil and zucchini and heat until boiling.
- 7 reduce heat to low, cover and simmer for 15 minutes.
- 8 top the chicken with mozzarella and parmesan and simmer until cheese melts.
- 9 serve over rice or noodles.
