Moroccan Spiced Beef Patties With Couscous

Ingredients

- 1 1/2 cups couscous or 1 1/2 cups fine bulgur
- 1 medium zucchini, halved lengthwise and thinly sliced
- 1 medium tomato, chopped
- 1/2 cup raisins
- 1/3 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- salt and black pepper
- 1 1/2 lbs ground beef
- 1 cup grated carrot (2 medium)
- 1/4 cup chopped parsley
- 3 scallions, trimmed and thinly sliced
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon

- 2 1.place couscous in a large bowl and add 1 ½ cups boiling water. cover and set aside for 5 minutes, then fluff with a fork.
- 3 2.toss couscous with the zucchini, tomato, raisins, mint, 2 tablespoons oil, lemon juice, 1 teaspoon salt, and ¼ teaspoon pepper. set aside.
- 4 3.in a large bowl, combine beef, carrots, parsley, scallions, tomato paste, paprika, cumin, cinnamon, 1 teaspoon salt, and ½ teaspoon pepper. make twelve ½-inch-thick patties.
- 5 4.heat remaining oil in a nonstick skillet. in batches, cook patties over medium heat, 3 to 4 minutes per side for medium-rare. serve with couscous.
