Poached Chicken (for Chicken Salads)

Ingredients
- Servings: 4
- 2 bone-in whole chicken breasts or 4 skinless chicken breast halves
- 2 carrots, sliced
- 1 onion, sliced
- 2 celery ribs, sliced
- water, to cover
Recipe
- 1 combine all in a 3 quart saucepan and bring to a boil.
- 2 reduce heat to a gentle simmer and skim.
- 3 whole breasts take 15-18 minutes while boneless breasts take 7-10.
- 4 *allow to cool in the liquid completely.
- 5 drain and dice the chicken to use in salads or pot pies.
- 6 reserve poaching liquid as a stock.
