Poached Chicken (for Chicken Salads)

Total Time: 22 mins Preparation Time: 2 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 bone-in whole chicken breasts or 4 skinless chicken breast halves
  • 2 carrots, sliced
  • 1 onion, sliced
  • 2 celery ribs, sliced
  • water, to cover

Recipe

  • 1 combine all in a 3 quart saucepan and bring to a boil.
  • 2 reduce heat to a gentle simmer and skim.
  • 3 whole breasts take 15-18 minutes while boneless breasts take 7-10.
  • 4 *allow to cool in the liquid completely.
  • 5 drain and dice the chicken to use in salads or pot pies.
  • 6 reserve poaching liquid as a stock.
