Lemon-mint Squash

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1/4 cup olive oil
  • 1 tablespoon shallot, minced
  • 1 teaspoon honey mustard
  • 2 tablespoons mint, chopped
  • 1 lemon, zested and juiced
  • 4 zucchini or 4 yellow squash, trimmed and sliced
  • 1 red onion, peeled and sliced

Recipe

  • 1 heat grill. in a bowl, combine the first 4 ingredients, 1 1/2 tbs lemon juice and 1/2 tsp lemon zest.
  • 2 add remaining ingredients to the bowl and toss gently to coat.
  • 3 grill 8 minutes or until the vegetables are tender, turning once.
