Lemon-mint Squash

Ingredients

- 1/4 cup olive oil
- 1 tablespoon shallot, minced
- 1 teaspoon honey mustard
- 2 tablespoons mint, chopped
- 1 lemon, zested and juiced
- 4 zucchini or 4 yellow squash, trimmed and sliced
- 1 red onion, peeled and sliced
Recipe
- 1 heat grill. in a bowl, combine the first 4 ingredients, 1 1/2 tbs lemon juice and 1/2 tsp lemon zest.
- 2 add remaining ingredients to the bowl and toss gently to coat.
- 3 grill 8 minutes or until the vegetables are tender, turning once.
