Lemon Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 1/2 cup yellow onion, chopped
  • 1 cup long grain rice
  • 2 tablespoons orzo pasta
  • 2 cups chicken stock
  • 3 tablespoons lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1/4 cup carrot, finely chopped
  • 1/4 cup zucchini, finely chopped

Recipe

  • 1 in heavy saucepan, melt butter and saute onion until transparent.
  • 2 add rice and orzo. cook 2 minutes, stirring often, until golden brown.
  • 3 add liquids, stir, cover and reduce to simmer for 20 minutes.
