Perfect Prime Rib Roast

Total Time: 3 hrs 45 mins Preparation Time: 15 mins Cook Time: 3 hrs 30 mins

Ingredients

  • Servings: 12
  • 1 (5 lb) choice cut prime rib roast
  • 1/2 cup kosher salt
  • 1 tablespoon garlic powder or 6 garlic cloves, crushed
  • pepper, generous amount
  • additional seasoning, as preferred

Recipe

  • 1 let roast come to room temperature, rub roast with seasonings.
  • 2 place roast, bone side down, in shallow roasting pan, but do not cover.
  • 3 add a small amount of water to pan.
  • 4 insert meat thermometer, not touching any bone.
  • 5 sear roast at 500°f for 15 minutes.
  • 6 do not open the oven door!
  • 7 turn temperature down to 350°f.
  • 8 cook approximately 20 minutes per pound.
  • 9 rare-140-150°f.
  • 10 medium 150-160°f.
  • 11 well 170-180°f.
  • 12 allow roast to sit for 15 minutes after removing from the oven, then slice.
