Perfect Prime Rib Roast

Ingredients
- Servings: 12
- 1 (5 lb) choice cut prime rib roast
- 1/2 cup kosher salt
- 1 tablespoon garlic powder or 6 garlic cloves, crushed
- pepper, generous amount
- additional seasoning, as preferred
Recipe
- 1 let roast come to room temperature, rub roast with seasonings.
- 2 place roast, bone side down, in shallow roasting pan, but do not cover.
- 3 add a small amount of water to pan.
- 4 insert meat thermometer, not touching any bone.
- 5 sear roast at 500°f for 15 minutes.
- 6 do not open the oven door!
- 7 turn temperature down to 350°f.
- 8 cook approximately 20 minutes per pound.
- 9 rare-140-150°f.
- 10 medium 150-160°f.
- 11 well 170-180°f.
- 12 allow roast to sit for 15 minutes after removing from the oven, then slice.
