Mac-n-cheese With Zucchini And Squash

Ingredients
- Servings: 8
- 2 cups macaroni
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 medium onion, diced
- 1 medium red bell pepper, diced
- 1/2 cup diced ham
- 1 cup velveeta cheese
- 1 cup milk
- 1/4 cup margarine
- 1 cup breadcrumbs
- 1/2 cup parmesan cheese
- 2 tablespoons vegetable oil
Recipe
- 1 cook the macaroni per directions until tender.
- 2 saute the zucchini, squash, onion, and pepper in the oil until tender.
- 3 in a sauce pan on medium heat add the milk and margarine and heat until margarine is melted.
- 4 cube the velveeta and add to sauce pan. stir with wisk until you have cheese sauce.
- 5 add the macaroni and the sauteed vegetables to your baking dish.
- 6 mix in the cheese sauce.
- 7 mix the bread crumbs and the parm and then top the dish with it.
- 8 bake at 350 for 30 to 45 minutes.
