Mac-n-cheese With Zucchini And Squash

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 2 cups macaroni
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 medium onion, diced
  • 1 medium red bell pepper, diced
  • 1/2 cup diced ham
  • 1 cup velveeta cheese
  • 1 cup milk
  • 1/4 cup margarine
  • 1 cup breadcrumbs
  • 1/2 cup parmesan cheese
  • 2 tablespoons vegetable oil

Recipe

  • 1 cook the macaroni per directions until tender.
  • 2 saute the zucchini, squash, onion, and pepper in the oil until tender.
  • 3 in a sauce pan on medium heat add the milk and margarine and heat until margarine is melted.
  • 4 cube the velveeta and add to sauce pan. stir with wisk until you have cheese sauce.
  • 5 add the macaroni and the sauteed vegetables to your baking dish.
  • 6 mix in the cheese sauce.
  • 7 mix the bread crumbs and the parm and then top the dish with it.
  • 8 bake at 350 for 30 to 45 minutes.
