Mary's Chinese Noodles

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 (16 ounce) package linguine
  • 2 chicken bouillon cubes
  • 1/4 cup almond oil (or sesame oil)
  • 1/2 large onion, sliced
  • 3 stalks celery, sliced
  • 4 leaves romaine lettuce, sliced (outer leaves)
  • 1/4 cup soy sauce
  • 3 eggs
  • 1 teaspoon black pepper

Recipe

  • 1 boil linguini for 5 minutes.
  • 2 drain all but 1 cup water.
  • 3 add bouillon cubes.
  • 4 cover and let steam for 5 minutes, stirring occasionally.
  • 5 heat oil in separate pan at medium high heat.
  • 6 when hot add onion and cook well.
  • 7 turn heat to medium.
  • 8 then add celery and lettuce, and sauté 1 minute.
  • 9 add soy sauce, eggs and pepper; scrambling eggs while they cook.
  • 10 when eggs are cooked, add noodles.
  • 11 stir fry for 2 minutes and serve.
