Healthy Diet Chicken And Vegetables

Ingredients

  • Servings: 2
  • 2 boneless skinless chicken breasts
  • 1/2 green pepper (cut into 1-inch pieces)
  • 1/2 red pepper (cut into 1-inch pieces)
  • 1/2 vidalia onion (sliced)
  • 2 small zucchini (sliced)
  • 0.5 (14 1/2 ounce) can diced tomatoes, drained
  • 1 -2 garlic clove (minced or crushed)
  • 5 -6 fresh basil leaves
  • 1 tablespoon olive oil

Recipe

  • 1 cut fresh or defrosted chicken breasts into bite size pieces.
  • 2 saute in a hot teflon skillet or fry pan until slightly browned. then remove. lower heat.
  • 3 add olive oil, saute garlic and onion until softened and beginnig to turn translucent, add basil leaves and red /green pepper until they begin to soften. add zucchini and cook until it begins to turn translucent.
  • 4 add dained tomatoes and cooked chicken until heated through.
  • 5 salt and pepper to taste.
