Mexican Rice Bean Veggie Thing

Total Time: 12 mins Preparation Time: 2 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 package lipton chinese fried rice (that's what i had)
  • 1 tablespoon butter
  • 1 cup salsa
  • 1 (14 1/2 ounce) can corn
  • 1 (14 1/2 ounce) can black beans
  • 1/2 cup frozen peas
  • garlic powder
  • cumin
  • oregano

Recipe

  • 1 cook rice per package directions, 5 minutes into simmering add salsa.
  • 2 stir.
  • 3 add corn and beans with a little bit of bean juice to thicken.
  • 4 add some peas (there weren't enough for me).
  • 5 add peas in time to thaw.
  • 6 add garlic and oregano to taste.
